The Liège table
Liège cuisine is popular, simple and unsophisticated. Among the great specialties are potée or salade liégeoise, boulets-frites, grilled white pudding, kidneys à la liégeoise, fricassee à la liégeoise, frisée aux lardons...
Crayfish can also be found in higher-level restaurants, a reminder of the days when the Meuse abounded in them...
When it comes to cheese, try "stron d'poye" (fromage blanc with Liège syrup) and Herve cheese.
On the sweet side, don't miss the "boukète" (buckwheat pancake, especially on August 15 in the Outremeuse district), the "cûtès peûres" (cooked pears) or the rice tart. And, of course, Liège syrup and chocolate...
And to top it all off, a glass of "Pèkèt" (Genever).
